Ingredients
1 cup boiled chick peas
1 tbsp grated garlic
Juice of 1 1/2 lime
4 tbsp tahini (sesame seed paste)
1/2 cup water
2tbsp olive oil
Salt to taste
Method
Add all the above ingredients to a food processor with half the water and blend to a paste. Keep adding water a few spoons at a time as required until you have the desired consistency. The paste should be smooth and creamy.
Transfer into a flattish serving dish. Smooth the surface with a back of a tablespoon that’s coated with olive oil. Drizzle some extra virgin olive oil onto the hummus. At this stage, you can sprinkle on some chilli flakes, paprika powder, finely chopped parsley or any other seasoning or herb of your choosing.
Best served chilled as a dip, with some freshly sliced carrots, cucumbers, beetroot.
This is a reduced oil recipe. The water can be replaced with olive oil in whole or part for a more traditional hummus recipe.
